You arrange them in a menu module in that nested layout. Making "parent" items and "child" items under them.

The module should have a setting for "show collapsed" (so it shows only the parent items) and clicking each parent item expands it to show the child items. The expand/collapse is a 'toggle' action so one mouse click expands, the second mouse click collapses the menu item.

I don't think you need any special extension, the built-in menu module can achieve what you want. Place the module in a side-bar position of the template. If the built-in module is not quite what you want, try searching the Extensions Directory for a "tree menu". They might be known by several names e.g. accordion, tree menu etc

I'm not sure if you can specifically do it as you have stated - having category item that is clicked to show the article links beneath (as the expanded menu (child items)). Joomla's typical behaviour is if you click a menu item linked to a category it takes you to a separate page with the list of articles associated with that category.
