Hi.I hacked the /administrator/components/com_content/tmpl/articles/default.php file and removed the a.access and a.created_by references, now those useless-for-me columns are gone. Of course they will be back again at the next Joomla update,
So that Joomla's update does not affect this, just create an override and edit it as you like
